Homemade Oven Roasted Potatoes

8 medium-small sized potatoes
1/4 c. oil
2 tsp. dried parsley
1 tsp. dried dill
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. paprika

(You can add as many, or as little spices as you'd like. If you aren't a fan of dill, do not add it to the mix. Or, if you like spicy foods, add some chili powder etc.)

 Thoroughly wash all the potatoes. I allowed mine to sit in water for 10 minutes. I then scrubbed them with a brush.

 Cut each potato into eight wedges.

 Wedges do not have to be perfect. But, should resemble somewhat of these so they cook properly.

 Grab all the ingredients listed above, and sprinkle them onto the potatoes.

Mix all the ingredients together. My little buddy wanted to help with this part. (Please excuse the Christmas PJ's. It's starting to get cold in our area.)

Potatoes should be as evenly coated as possible. If you prefer, you can mix all the ingredients (aside from the potatoes) in a bowl. Then use a pastry brush to spread the mixture on the potatoes.

Line a cookie sheet with tin foil or parchment paper. Make sure to also grease the parchment or foil so the potatoes don't stick. Place in preheat 375 degree oven for 45 minutes. Or, until potatoes are golden brown.

Remove from oven and let cool slightly before serving. They
can be eaten at anytime! Breakfast, lunch or dinner! They are a hit in my home.

I'm so happy that Mr. Picky enjoys them. I've been having a hard time making food he enjoys.
