Peanut Butter Balls

Ingredients:
2 cups peanut butter (I used creamy/smooth)
1/4 cup butter (room temperature)
1/2 teaspoon vanilla extract
2 - 2 1/2 cups confectioners sugar
2 cups of semi sweet chocolate chips
1 tablespoon shortening

Step 1:
Line two baking sheets with parchment or wax paper.

Step 2:
Place peanut butter and butter in a microwaveable bowl. Heat ingredients in a microwave for about one to two minute. Heat until soft, make sure to check( ingredients every 20-30 seconds.

Step 3:
Stir in the vanilla extract and confectioners sugar. Mix until it the consistency is similar to play dough. (If needed, add more sugar.)

Step 4:
Roll dough into 1 inch round balls. Then, place on lined cookie sheets.

Step 5:
Refrigerate
balls until firm for several hours. You can also place them in the freezer.

Step 6:
Melt chocolate and shortening in a double broiler. If you do not own one you can place a heatproof bowl placed over a saucepan of simmering water.

Step 7:
Dip the balls one at a time in the melted chocolate. Make sure the entire ball is coated with chocolate. Then, remove the peanut butter ball from the melted chocolate. (allowing excess chocolate to drip back into the bowl.)

Step 8:
Place the chocolate covered balls back on the baking sheet. If desired, sprinkle the balls with finely chopped peanuts, candy or even coconut. When all the balls have been dipped in the chocolate, place in the refrigerator until the chocolate has set.

These peanut butter balls can be stored in an a
irtight container for up to two weeks. Or, frozen for a few months.

Makes roughly 60 pieces, depending on size.
