Coconut Bird Nest Cookies

Ingredients:
4 cups sweetened shredded coconut
1 can of condensed milk
2 egg whites
1 teaspoon pure vanilla extract
1/4 teaspoon of almond extract
1/4 teaspoon salt
1/4 teaspoon cream of tartar
Egg shaped candy (Mini eggs, jelly beans etc.)

Step 1:
Combine coconut, condensed milk and extracts in a large bowl.

Step 2:
Whip egg whites, salt and cream of tartar with an electric mixer on high. Mix until it forms medium-firm peaks.

Step 3:
Carefully fold the egg whites into the coconut mixture.


Step 4:

Drop tablespoons of batter on a cookie sheet lined with parchment paper. Shape mixture into a bird nest shape using either a spoon, or your hands.

Step 5:

Place in a
preheated oven set to 325 degrees F. Bake for 25 to 30 minutes, or until golden brown.

Step 6:
Once "nests" are cooled, place egged shaped candy in the center.
