Flourless Peanut Butter & Chocolate Chip Cookies

These cookies are so simple and delicious. I made them for my Great Grandfather's 90th birthday, everyone who tried them loved them. The best part was, no one knew they were flour/gluten free.

Ingredients:

1 cup peanut butter (I used creamy)
1 cup firmly packed brown sugar
1 egg
½ cup semi-sweet chocolate chips (I used mini chips)

Step 1:
Preheat oven to 350 degrees.

Step 2:
Line two baking sheet with parchment paper. Non-stick cooking spray would work as well. Make sure to pray the whole surface

Step 3:

Mix peanut butter, brown sugar and egg in a medium sized bowl. Once everything is smooth, incorporate the chocolate chips. Make sure batter is even.

Step 4:

Roll into 1 inch balls and place on baking sheets. Flatten each ball with a fork, making a criss-cross pattern.

Step 5:

Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake. (Let cool and enjoy!)
